A sheep milk cheese based on the French Valençay.  It has a beautiful bloomy white rind over a light vegetable ash layer.  This cheese won Gold at the Los Angeles International Dairy Competition in 2024.  It has a fudgy exterior texture due to the vegetable ash and a creamy almost chalky interior.  The flavor has light and delicate floral and citrus notes with a slight peppery finish.
